Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 10025, published by ANSES as “Crabe ou tourteau, bouilli/cuit à l'eau”, as it stands; it does not recompute it.

For fish, season, wild or farmed origin and condition at catch move the fat content widely across the year. Canned versions add their packing liquid, which counts towards the 100 g on the scale.
