Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 13023, published by ANSES as “Litchi, chair sans peau, sans noyau, cru”, as it stands; it does not recompute it.

For fruit, variety, ripeness at picking and storage time move sugars and vitamin C the most: two specimens of the same fruit can sit well apart on those two lines without either being wrong.
