Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 20502, published by ANSES as “Haricot blanc, bouilli/cuit à l'eau”, as it stands; it does not recompute it.

For pulses, dry, soaked, cooked and canned give four distinct per-100 g profiles. The gap comes from water taken up in cooking and, for canned, from the salt in the brine, which shows only on the sodium line.

Of the 17 lines above, 15 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.
