Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 15202, published by ANSES as “Beurre de cacahuète ou pâte d'arachide”, as it stands; it does not recompute it.

For pulses, dry, soaked, cooked and canned give four distinct per-100 g profiles. The gap comes from water taken up in cooking and, for canned, from the salt in the brine, which shows only on the sodium line.
