Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 13212, published by ANSES as “Compote de pomme, sans précision sur la teneur en sucres ni sur le rayon (aliment moyen)”, as it stands; it does not recompute it.

For fruit, variety, ripeness at picking and storage time move sugars and vitamin C the most: two specimens of the same fruit can sit well apart on those two lines without either being wrong.
