Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 13004, published by ANSES as “Avocat, chair sans peau, sans noyau, cru”, as it stands; it does not recompute it.

For fruit, variety, ripeness at picking and storage time move sugars and vitamin C the most: two specimens of the same fruit can sit well apart on those two lines without either being wrong.

Of the 17 lines above, 15 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 2 lines, the source publishes a threshold marker rather than a number: carbohydrate “traces” and vitamin c “< 0,5”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.
