Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 13040, published by ANSES as “Pomelo (dit Pamplemousse), chair sans peau, sans pépins, cru”, as it stands; it does not recompute it.

For fruit, variety, ripeness at picking and storage time move sugars and vitamin C the most: two specimens of the same fruit can sit well apart on those two lines without either being wrong.

Of the 17 lines above, 11 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 6 lines, the source publishes a threshold marker rather than a number: sodium “< 2”, iron “< 0,25”, zinc “< 0,5”, fat “< 0,5”, saturates “< 0,15” and vitamin d “< 0,1”.
