Source : ANSES, table Ciqual 2025 (mise à jour du 19/11/2025), record 28800, published by ANSES as « Jambon cru ». DOI : 10.57745/RDMHWY. Data made available under the Open Licence 2.0. ANSES does not endorse or review Radish. Method and sources.

Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 28800, published by ANSES as “Jambon cru”, as it stands; it does not recompute it.

For meat, the cut, the fat left on after trimming and the cooking method weigh more than the species. That is why the table separates “raw”, “cooked” and sometimes lean-only: these are different foods, not different spellings.

Of the 17 lines above, 16 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 1 line, the source publishes a threshold marker rather than a number: fibre “traces”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.

Nutri-Score

Radish does not display a Nutri-Score for this record. The algorithm needs energy, sugars, saturated fat, sodium and fibre; at least one of them is not quantified in CIQUAL 2025 · record 28800 for this food. A missing input is not a zero, and a letter computed on a zero we never measured would be a letter we made up.

Where this record sits among meat

Radish holds 3501 meat sourced from an institutional table; this record is the 2536th energy value in ascending order out of 3501. Of the 3525 meat in the database, 3501 come from an institutional table and are the only ones counted in these medians. Per 100 g:

Careful with these medians: they pool raw and cooked meat in one set, and cooking alone moves a per-100 g figure. This position and these medians describe the Radish database, not the quality of a food: they say neither that it should be eaten nor that it should be avoided.
