Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 28900, published by ANSES as “Jambon cuit, supérieur”, as it stands; it does not recompute it.

For meat, the cut, the fat left on after trimming and the cooking method weigh more than the species. That is why the table separates “raw”, “cooked” and sometimes lean-only: these are different foods, not different spellings.

Of the 17 lines above, 14 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 3 lines, the source publishes a threshold marker rather than a number: calcium “< 20”, fibre “< 0,19” and vitamin d “< 0,5”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.
