Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 28101, published by ANSES as “Porc, côte grillée/poêlée”, as it stands; it does not recompute it.

For meat, the cut, the fat left on after trimming and the cooking method weigh more than the species. That is why the table separates “raw”, “cooked” and sometimes lean-only: these are different foods, not different spellings.
