Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 19584, published by ANSES as “Mascarpone”, as it stands; it does not recompute it.

For dairy, fat content is a manufacturing decision rather than a property of the food: whole, semi-skimmed and skimmed are three separate records, and straining — Greek-style yoghurt, skyr — creates more of them.

Of the 16 lines above, 14 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 3 lines, the source publishes a threshold marker rather than a number: fibre “< 0,5”, vitamin d “< 0,5” and folate (b9) “< 5”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place; 1 of those line is not carried in our data at all and is named here rather than dropped in silence.

Where this record sits among dairy

Radish holds 936 dairy sourced from an institutional table; this record is the 825th energy value in ascending order out of 936. Of the 971 dairy in the database, 936 come from an institutional table and are the only ones counted in these medians. Per 100 g:

These medians pool all the sourced dairy in the database, plain and prepared alike. This position and these medians describe the Radish database, not the quality of a food: they say neither that it should be eaten nor that it should be avoided.

Recipes in the Radish library that use it

Mascarpone appears in 1 of the 937 recipes bundled with the app: Tiramisu.

Those recipe figures are estimated from their ingredients, are labelled as such in the app, and are not used on this page.
