Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 26036, published by ANSES as “Saumon, élevage, cru”, as it stands; it does not recompute it.

For fish, season, wild or farmed origin and condition at catch move the fat content widely across the year. Canned versions add their packing liquid, which counts towards the 100 g on the scale.

Of the 17 lines above, 14 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 3 lines, the source publishes a threshold marker rather than a number: carbohydrate “traces”, sugars “traces” and fibre “< 0,25”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.
