Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 32140, published by ANSES as “Flocons d'avoine”, as it stands; it does not recompute it.

For starchy foods, raw versus cooked changes everything: cooking takes up water, mass rises and per-100 g figures fall accordingly. Checking which of the two states this record covers is the cheapest precaution on this page.
