Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 13008, published by ANSES as “Ceriser, chair et peau, sans noyau, crue”, as it stands; it does not recompute it.

For fruit, variety, ripeness at picking and storage time move sugars and vitamin C the most: two specimens of the same fruit can sit well apart on those two lines without either being wrong.

Of the 17 lines above, 14 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 3 lines, the source publishes a threshold marker rather than a number: sodium “< 5”, fat “< 0,3” and saturates “< 0,01”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.
