Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 19016, published by ANSES as “Lait entier (aliment moyen)”, as it stands; it does not recompute it.

For dairy, fat content is a manufacturing decision rather than a property of the food: whole, semi-skimmed and skimmed are three separate records, and straining — Greek-style yoghurt, skyr — creates more of them.
