Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 15000, published by ANSES as “Amande, avec peau, sans sel ajouté”, as it stands; it does not recompute it.

For nuts and seeds, plain, roasted and salted are three separate records: roasting concentrates figures through water loss, salting moves the sodium line only, and butters or pastes move several more.

Of the 17 lines above, 14 carry a number. A cell without a number is not a zero: the source does not publish the amount, or it falls below the measurement threshold.

On 3 lines, the source publishes a threshold marker rather than a number: sodium “< 5”, vitamin d “< 0,25” and vitamin c “< 0,5”. One convention applies here and only one: that marker is reproduced word for word in the nutrient’s cell, and no number is invented in its place.
