Where these figures come from

The Ciqual table is published by ANSES and describes the French food supply: it pools laboratory analyses, manufacturer submissions and recipe calculations. Radish copies record 15047, published by ANSES as “Chia, graine, séchée”, as it stands; it does not recompute it.

For nuts and seeds, plain, roasted and salted are three separate records: roasting concentrates figures through water loss, salting moves the sodium line only, and butters or pastes move several more.
